Average age of vines : 20 years

Since 1998, the whole property has been turned over to organic and biodynamic production, controlled and certificated by ECOCERT SAS 32600.

Harvesting : mostly by machine.
Although our vinification is traditional, we are constantly on the lookout for ways to improve still further the quality and finesse of our wines:
- Red wines are fermented with natural yeast, light wines produced at very low temperature, alcoholic fermentation of Vins Doux Naturels stopped by adding neutral alcohol.
Maturing : There's almost none for our "quaffing wine". Our Prestige wines are for the most part matured in French oak barrels for a year, whilst the Rivesaltes mature for 7 - 22 years in very old wooden tuns.

It was in 1895 that Michel Cazes bought his first vines. In common with most growers of his generation, he grew vines in order to supply the local traders with their raw material. In 1927, his son Aimé succeeded in talking him into buying Mas Joffre, the old home of the famous Marshall, a son of the land. Acquiring this "little" 8 hectare (20 acre) vineyard was a turning point in the Domaine Cazes history. Over the years, neighbouring land parcels were added, reaching a total of 40 hectares (98 acres) in the 1950s.
André, the elder of two brothers, provided the impetus, with the first bottles of Cazes wine appearing in 1955. In 1971, the younger brother, Bernard, graduated from the university of Bordeaux. The future was set when he joined the family business. André was in charge of sales, Bernard of production on land which had grown to 60 hectares (150 acres). Today, the Domaine Cazes covers an area of 170 hectares (420 acres) which, each year, give birth to some 15 different wines.
